The Story Behind the Recipe
I first tried this dish at a lovely little taverna I enjoy visiting, and I was hooked. It was so delicious that I had to recreate it at home. By trying different ingredients and adjusting the quantities, I reached the result I wanted. In the end, I may even prefer it to the version I used to order out. The chicken thigh stays juicy, the sun-dried tomatoes add intensity, and the feta brings the wine and chicken juices together. Since filming the video, I have made it again about three times. If I want a little sweet contrast, I add a teaspoon of honey at the end, but it is optional. I used dried tomatoes that I rehydrated before adding them to the dish.
The Technique
- Brown the chicken in batches and keep both the deglazing liquid and any juices on the plate.
- Add feta, optional honey and oregano at the end.
-
Boneless chicken thigh fillets: 1 kg, cut into pieces
-
Sun-dried tomatoes: approximately 100-150 g, weighed after rehydrating and draining
-
Feta: approximately 200 g, crumbled
-
Onion: 1, grated
-
Garlic: 2-3 cloves, chopped
-
White wine: for deglazing and finishing
-
Olive oil: for sautéing
-
Honey: 1 tsp, optional
-
Oregano and black pepper: to taste
-
Additional salt: only if needed after adding feta
Method
-
If using dried sun-dried tomatoes, rehydrate until softened and drain.
-
Heat olive oil and brown the chicken in batches without crowding. Transfer to a plate.
-
Deglaze the pan with wine, scrape the base and reserve the liquid.
-
Add more olive oil and sauté the grated onion. Add garlic and sun-dried tomatoes.
-
Add white wine, chicken, reserved deglazing liquid and every juice left on the plate. Season with pepper.
-
Cook over medium heat until the chicken is cooked through and the liquid has reduced.
-
Add feta, optional honey and oregano. Stir to combine and check whether any extra salt is needed.
Tips and Secrets
-
Taste before adding extra salt, because the sun-dried tomatoes and feta are already quite salty.
-
Return all the juices released by the chicken on the plate to the pan because they add extra flavour to the sauce.
