The Story Behind the Recipe
This is the kind of crab stick salad you often find served as a meze in Greek fish tavernas. I enjoyed it and wanted to make it at home, where it costs much less and takes very little effort.
My version uses surimi and follows a simple approach. Add olive oil and vinegar, mix, taste and adjust until you like the balance. There is no need for a strict ratio, because some people prefer a sharper salad and others a milder one.
The Technique
- Thin strips: Separate the surimi so it mixes evenly with the dressing.
- Taste and adjust: Add the olive oil and vinegar a little at a time.
- Herbs at the end: Spring onion and parsley finish the salad.
-
Surimi crab sticks: 1 packet
-
Olive oil: to taste
-
White wine vinegar: to taste
-
Spring onion: to taste, finely chopped
-
Fresh parsley: a little, finely chopped
Method
-
Remove the individual wrappers from the surimi and separate or cut it into thin strips.
-
Add a little olive oil and vinegar and mix thoroughly.
-
Taste and gradually add more of either until you reach the balance you enjoy.
-
Add the spring onion and parsley and mix once more.
Tips
-
I used white wine vinegar, but another vinegar you enjoy will also work.
-
Vinegars vary in strength, so add yours gradually.
-
Adjust the quantities to the size of your packet and your preferred flavour.
